Chef Matías Salvia takes the food served in our restaurant to the next level, working directly with suppliers both on land and at sea.

At Faustino Gran every little detail is important. Each service, each space, each experience is key so that our customers enjoy a stay of the highest quality. For this reason, our restaurant is a place where we strive to offer food that measures up to our hotel.

At the helm of the project, chef Matías Salvia has been working hand in hand with local farmers and fishermen in Ciutadella for some time. This collaboration has given the restaurant a new approach, featuring plenty of seasonal, vegetarian produce with a clear commitment to healthy, fresh, plant-based food grown in Minorca. For example, we get our fish and seafood from Marenova del Sud, thanks to Paco, Richard and Andrea. The delicious vegetables that we use come from Verdures Marquès in Son Juaneda de Dalt, thanks to Miquel Marqués Truyol and Caro. Our eggs come from S'Hort des Pont, where Lito Bosch supplies us with the highest-quality products. And we also work with Huerta de Binibó, run by Antoine Philipon, for fresh vegetables and herbs, and our own vegetable garden in Casa de Pau.

Offering the most natural flavour is one of the aims of our culinary project, which also takes into account the importance of the origins of the food we consume. We know that local, seasonal food is beneficial for our health. That’s why we encourage our diners to try new dishes and choose vegetarian options that, at the same time, are full of creativity, made according to innovative ideas.

Paying attention to our diet means taking into account the health of the body, mind and soul. Avoiding ultra-processed foods, products high in sugar and fat and using ingredients grown locally in Menorca and a variety of high-quality fish: this is what defines our cuisine.

We respect the nature that surrounds us and the products that it provides us with and also the people with whom we work, from those working on the land and the fishing boats and all the kitchen and dining room staff. The sum of all this is the food we serve at Faustino Restaurant, special dishes that convey our love for our island and create unforgettable memories and experiences together with our diners.

The final result of all this effort and teamwork is a Tasting Menu designed as a journey through different dishes made up of six different courses. Fish, vegetables, Wagyu and two dessert options are the key features of this series of delicacies, which is perfect for sharing as a couple or with friends.
